Tea fields are flush with tender new growth. The harvest will soon begin.
Through the lens of tea, culture is revealed. From orthodox and revered to inventive and wild, we'll explore the heritage and ceremony of Japanese green tea. We’ll learn the finer points of whisking and brewing tea, cook with tea, craft cocktails with tea, and even try our hand at picking and roasting leaves from the many wild tea trees that grow in the area.

We’ll add sazae mollusks, udo (mountain asparagus), tea leaves, and some wild herbs to the ongoing April bounty of giant bamboo shoots, fuki, and clams.
Details
Make your way to Karatsu, in the Northwest corner of Kyushu, a little over an hour by train from the Fukuoka airport or shinkansen station. We’ll gather for a private welcome dinner at an intimate countryside restaurant. Then it's early to bed to rest up after a long day of travel.
We'll gather in Mirukashi and start with a few Japanese cuisine fundamentals. Then we’ll stretch our legs and head out to gather a bouquet of culinary shoots and leaves to bring back to the kitchen. We'll prepare a multi-course meal full of fresh early summer flavors.
We'll spend the morning with Hanako at her pottery studio monohanako and learn about the art and craft of Japanese tableware. After lunch we'll dive into another multi-course meal featuring summer flavors from the sea like tiger prawns, and sazae horned turban mollusks.
We’ll travel to Ureshino, the birthplace of Japan's tea culture, for an experience amidst tea fields as far as the eye can see. We'll drink tea at an exclusive tea space and soak our feet in Ureshino's healing onsen waters before returning to Karatsu to dine at a beloved place featuring female-forward food, craft, and design.

Salon sessions are $3550 per person. A non-refundable deposit of $1800 secures your place with the balance due 60 days before the start date.
Four nights in a private room plus all food, drink, and transportation during the salon session. Does not include transportation to and from Karatsu.
Plans are hard to make these days. All deposits are non-refundable but give me two months notice and I'll happily apply your deposit to a future session.
Seating is limited.
Salon sessions are limited to 7 people to ensure a relaxed and intimate experience.
