April is a vibrant month for dining, when abundance defines the season and spring points the way toward summer. Slip on your boots for a trek to collect all the wild things: bamboo shoots, bracken ferns, fuki stems, and the tender fronds of peppery sansho. In the kitchen, we’ll prepare feasts of dazzling combinations and myriad flavors.

Join Us
We’ll gather in Mirukashi and begin with a few Japanese cuisine fundamentals. Then it’s off to dig up giant bamboo shoots — before the wild boars get to them first. Back in the kitchen, we’ll prepare a multi-course lunch that celebrates the wild flavors of spring.
This morning we’ll enjoy a masterclass with herbalist Miho-san. We'll head out into the field to learn about the medicinal properties of the local flora. Then we'll bring our wild harvest back to the kitchen and extract each plant's essence into a seasonal cordial that tastes of terroir.
come to mirukashi
Make your way to Karatsu, nestled in the northwest corner of Kyushu—just over an hour by train from Fukuoka’s airport or shinkansen station. We’ll gather at the Mirukashi Salon, perched on a quiet hilltop, and begin with a lively welcome dinner full of fresh, seasonal flavor.
We’ll visit Hanako in her studio, where she’ll share her philosophy of form, function, and the quiet poetry of everyday objects. Watch as she brings vessels to life with her signature throwing techniques. Together, we’ll create a piece for you to bring home — a tactile memory of Mirukashi.
We’ll journey to Ureshino, a nearby town considered the birthplace of Japanese tea. On an exclusive tea estate nestled among manicured fields, we’ll enjoy a modern expression of tea ceremony that weaves together Ureshino’s twin legacies of tea cultivation and ceramics.
Back in the kitchen, we’ll gather for a second cooking session to make takikomi gohan — mixed rice with the bamboo shoots we dug ourselves. We’ll pack a few seasonal side dishes, simple wagashi confections, and of course, a selection of drinks to round out our feast.
We’ll take our picnic to a scenic hilltop with sweeping views of an island-studded bay. There, we’ll whisk matcha and enjoy sweets in the open air. After a stop at your hotel to freshen up, we’ll gather one more time in Mirukashi to celebrate the richness of the season.

Salon sessions are $3,550 USD per person. To reserve your place, a non-refundable deposit of $1,800 is required. The balance is due 60 days before your session begins.
Four nights of quiet comfort in a private room, all meals and drinks lovingly prepared, and transportation during the salon experience. (Travel to and from Karatsu is not included.)
Plans shift. If you need to reschedule, I understand. While deposits are non-refundable, with at least 60 days’ notice, I’ll gladly apply your deposit to a future salon session.
