HARVEST

PRELUDE

Season of anticipation.

NOVEMBER 8—12, 2027

Five days immersed in the ripening flavors, ancient traditions, and deepening rhythms of countryside Karatsu, Japan. Forage, cook, create, and savor autumn as the harvest unfolds.

Fire, fermentation and the flavors of the land.

Gather around glowing embers to explore the art of charcoal grilling. Meet soy and sake brewers who reveal the extraordinary transformations born of time and tradition. Venture into the wild to gather seasonal botanicals, crafting fragrant cordials that capture the essence of the land.

Wild, local, lyrical, and alive — a feast that roots you in place and time.

Autumn settles over the countryside, the first fires lit in the hearth. Mushrooms emerge from the forest floor, wild botanicals offer their last green gifts, and the promise of the coming harvest awakens our senses.

My promise to you —
at Mirukashi salon, every detail is considered,
every moment is intentional

Artisan Atelier

Step into the pottery atelier for a rare and exclusive glimpse. Watch as she brings clay to life with her signature throwing techniques. As vessels take shape beneath her hands, she reflects on form, function, and the poetry of everyday objects.

Visit Hanako's studio where clay, fire, and philosophy meet.

Evening gathering

Set within a farmhouse, the meal reflects a quiet conversation with the landscape. Garden vegetables and freshly caught fish find their way to the table, creating a meal that feels grounded, personal, and shaped by place.

A countryside table, shaped by field and sea.

 DAY 3

Soy Brewery

Meet a soy brewer breathing new life into ancient fermentation traditions. Discover the quiet transformation of soybeans, koji, salt and time, and how a humble ingredient becomes one of the defining flavors of the Japanese table.

The craft and alchemy behind Japan’s most essential seasoning.

Sake Brewery

Step inside a historic sake brewery, where rice, water and craftsmanship converge. Discover haneki-shibori, a rare traditional pressing method in which the weight of enormous stones  gently extract sake from fermented rice.

An intimate encounter with the art of fermentation.

Evening Gathering

We dine in a residential restaurant run from the chef’s own home, where the boundaries between kitchen and table gently dissolve. The evening unfolds slowly, shaped by the quiet intimacy of a meal shared among friends.
