AUTUMN

BOUNTY

A chorus of flavor.

NOVEMBER 23—27, 2026

The maples blaze red, the air sharp with autumn’s breath, and the season lays its feast before us. Tai sea bream glistens at its peak, yuzu perfumes the air, persimmons glow like lanterns, and earthy mushrooms resonate.

On the water —  Japan’s unseen nori fields.

We journey to the Ariake Sea to see Japan’s most coveted nori fields. This rare and privileged glimpse — unseen by most — reveals the quiet mastery of sea cultivation. Taste nori fresh from the nets, then savor its transformation into the crisp, fragrant sheets beloved across Japan and beyond.

Wild, local, lyrical, and alive — a feast that roots you in place and time.

Each meal honors Japan’s microseasons — fleeting flavors gathered, celebrated, and savored while they last. More than ingredients, they are moments in time: expressed on the plate, felt on the palate, and cherished in memory.

HERE, every DETAIL IS CONSIDERED
every MOMENT IS INTENTIONAL

From private meals that celebrate Japan’s fleeting micro-seasons to hands-on encounters with master craftspeople, you’ll experience the richness of Mirukashi in its most personal form. This is not simply a trip, but an immersion — a chance to taste, create, and dwell fully in beauty, together.

The Shape of our Days

 DAY 1

ARRIVAL

Travel to Karatsu, in the northwest corner of Kyushu, a little over an hour by train from Fukuoka Airport or the shinkansen station. Unpack, exhale, and ease into the rhythm of the days ahead.

Arrive at the edge of land and sea. Your oceanfront home awaits.

ARRIVAL

We’ll gather at the Salon for a welcome dinner, beginning with a seasonally infused Mirukashi original cocktail. From there, fresh flavors flow and new friendships take root — the adventure begins.

Make your way to Mirukashi for an enchanted evening.

 DAY 2

masterclass

We’ll learn beside a master soba artisan and try our hand — from mixing and rolling to slicing with precise strokes. At the table, steaming bowls await, celebrating soba’s earthy flavor.

Soba — the rhythm and grace of buckwheat noodles.

Artisan Atelier

Step into the pottery atelier for a rare and exclusive glimpse. Watch as she brings clay to life with her signature throwing techniques. As vessels take shape beneath her hands, she reflects on form, function, and the poetry of everyday objects.

Visit Hanako's studio where clay, fire, and philosophy meet.

Evening Gathering

We dine in a residential restaurant run from the chef’s own home, where the boundaries between kitchen and table gently dissolve. The evening unfolds slowly, shaped by the quiet intimacy of a meal shared among friends.

An evening that feels like a secret unfolds.

 DAY 3

on the water

We’ll journey to the Ariake Sea, boarding a small boat across vast tidal flats. We’ll witness how tides, minerals, and craftsmanship converge to create this exquisite delicacy.

Nets glisten in the brine where Japan’s finest nori grows.

history and flavor

From earthen vats to wooden barrels, withnes the quiet hum of fermentation. We’ll savor a multi-course lunch that showcases soulful brews — a rare fusion of tradition and innovation.

A centuries-old vinegar brewery where time itself is an ingredient.

Evening gathering

Set within a farmhouse, the meal reflects a quiet conversation with the landscape. Garden vegetables and freshly caught fish find their way to the table, creating a meal that feels grounded, personal, and shaped by place.

A countryside table, shaped by field and sea.

 DAY 4

A Family Recipe

Back in the Mirukashi kitchen, we’ll learn to make kashiwameshi, an heriloom family recipe. We’ll shape musubi to pack alongside seasonal sides — a celebratory lunch ready to enjoy in the crisp autumn air.

Color, texture, and flavor form a joyful expression of the season.

WHERE FLAVOR ORIGINATES

A picnic in the countryside, where all flavor originates. After our picnic, we’ll linger — unhurried — for a quiet ceremony of matcha and sweets, a moment of stillness and savoring beneath the open sky.

Where the landscape itself becomes part of the feast.

Farewell meal

We gather at the Salon for a final dinner, shared family-style among people who now feel like kin. The table feels like home — a relaxed evening of conversation, laughter, and food that brings the season and session to a gentle close.

Where the season sets the table, one last time.

 DAY 5

carry it home

Wake up to one last seaside sunrise. Today you leave with more than memories. Because the real souvenir isn’t something you pack — it’s the quiet shift within you that lingers, long after you’ve left.

Carry home new eyes, a new rhythm, and a new way of meeting life.
